NTTC June 2009 Green Challenge

In the aftermath of all those chocolate recipes, it is time to clean up our acts. Go Green! is the mantra for NTTC June 2009. Same principal, same set of rules, the special ingredient to use this time around is "Something Green", well not green jelly babies but some beautiful leafy vegetables or herbs or salad leaves. Caitlin of Food Nerd and the winner of NTTC May 2009 has graciously offered to co-host NTTC this month and I am very excited and a tad relieved to be sharing the event hosting with someone. Thanks Caitlin!
The official NTTC No. 4 June 2009 Challenge begins today as I write this post and ends on June 30, 2009. The roundup for the same will be done in the first week of July and a winner will be announced. The winner will be decided based on the originality of the recipe, the creativity in putting it together, the time taken to prepare it and how healthy it is. The star of this month’s challenge is Leafy Greens. The goal is to come up with a fast, healthy recipe to tide us in our harried lives. Here are the details of the challenge.
Recipe : [Pantry Staples + Fresh Ingredients + Leafy Greens + 15-20 minutes]
Recipe Format : Recipe Title [serves] /Checklist (a list of equipment and ingredients)/Task (a maximum of 10-12 sentences of informally listed series of actions performed). See Recipes for Format Help.
