Simple Strawberry Cupcakes

 

I did my weekly rotation of Thomas Dux today. I scored 4 punnets of fresh strawberries for $5.00. A strawberry or two in each punnet is a tiny bit squashed, maybe that is why they can afford to give it at that price. But 50 odd strawberries for that price are not bad at all especially if they are all gone in our home by the end of the day. I cut some strawberries for a fruit salad and the rest I chopped up into tiny little pieces to make simple strawberry cupcakes.

SIMPLE STRAWBERRY CUPCAKES

Preparation Time – 20mins | Baking Time – 20 minutes | Makes – 12

Ingredients

1 cup self-raising flour
1/2 cup caster sugar
90g butter, softened
2 eggs
1/2 tsp vanilla extract
2 tbsp milk
1 cup strawberries, finely chopped

 

Method

Preheat oven to 180C. Line a 12 hole muffin pan with paper cases.

Beat butter, sugar, vanilla extract, eggs, flour and milk in a bowl until well combined. Keep beating till mixture becomes pale. Add strawberries and using a fork, swirl them gently through the batter. Divide mixture in paper cases filling each case 2/3rds full.

Bake in pre-heated oven for approximately 20 minutes. Cool on wire rack when cooked through.

    I am good Soph! Thanks :) I have been so caught up with work and my self-inflicted Project 365 [which is killing me and I am enjoying it thoroughly lol] … but over the Easter weekend I thought of not neglecting Gel’s Kitchen .. missed food blogging :)
