A green low carb and hydrating smoothie to reset your system every Monday after a weekend of erratic eating and drinking. Packed with the green goodness of cabbage, lettuce, cucumber and parsley; this smoothie gently cleanses your insides and makes you feel super energetic.
- 1 pear, quartered and deseeded
- 1 large purple cabbage leaf, chopped
- 1 cucumber, chopped
- 1 large iceberg lettuce leaf
- 3 sprigs of parsley
- juice of 1/2 a lemon
- 1 cup (250ml) chilled coconut water
Place all ingredients in the jug of a blender.
Process until smooth. Pour in a tall glass and enjoy immediately.
Smoothie will keep in a glass jar in the fridge for up to 2 days.
If you don’t have pear on hand, a Granny smith or red apple will work too.
Make sure you wash the lettuce and cabbage leaves to remove all dirt.
The smoothie will separate after a few minutes. This is because of the high water content. Just give it a quick stir to make it creamy again.
