AVOCADO AND LIME ICE CREAM

Ingredients

  • 3 avocados, peeled and seed removed
  • 220g condensed milk
  • 1 can (270ml) coconut milk
  • juice of 2 limes
  • 1 teaspoon vanilla extract
  • pinch of salt

Instructions

  1. Place all ingredients in the jug of a blender. Blend until smooth.
  2. Pour in a shallow metal tin (an aluminium loaf/cake tin works a treat). Cover with cling wrap and freeze in the freezer for at least 6 hours or overnight.
  3. Thaw for 5-10 minutes at room temperature before serving.
