A simple, fuss-free, classic cheesecake recipe. Delicious and only 7 ingredients!


For The Base

250g Nice Biscuits [or any kind of plain sweet biscuits]
125g butter, melted
1/2 teaspoon mixed spice

For The Filling

4 eggs
3/4 cup caster sugar
500g cream cheese
1 tablespoon finely grated lemon rind


  1. Preheat oven to 160C [320F].
  2. Process biscuits until fine. Add butter and mixed spice. Process until combined. Press mixture in the base and along the sides of a round 20cm springform pan. Pre-bake in the heated oven for 8 minutes. Remove and cool to room temperature.
  3. Make filling by beating eggs and sugar in a small bowl with an electric beater until thick and creamy. Add cream cheese and rind and beat until well combined and smooth.
  4. Pour filling into the prepared tin and bake for about 55-60 minutes. Remove and cool for 20 minutes before refrigerating overnight. Serve cheesecake sprinkled with mixed spice.
