Lately, we have been incorporating chia seeds in our daily meals. Chia seeds pack a punch when it comes to protein, iron, potassium, magnesium, folate and protein. They are very rich in fiber, antioxidants, minerals, and heart-healthy omega-3 fatty acids. With more folate than spinach, more potassium than bananas, more Omega-3 fatty acids than salmon and more calcium than milk, chia seeds are great for heart, brain, oral, skin and digestive health. A true powerhouse of an ingredient. And chia pudding is the best way to enjoy them!

We love ours as is, just good old coconut caramel chia pudding goodness. But we also often top it with berries and granola for breakfast. It makes for a super nutritious light snack.

VEGAN COCONUT CARAMEL CHIA PUDDING

Ingredients

  • 1 cup light coconut milk
  • 1 cup almond milk
  • 2 teaspoons vanilla extract
  • 2 tablespoons coconut sugar
  • 6 tablespoons (70 g) chia seeds
  • Pinch of salt

Instructions

  • Add all ingredients to a 1-litre lidded glass container. Mix well to remove all lumps.
  • Allow to set by chilling in the fridge for 3-4 hours or overnight before serving.

Notes

Keeps well in the fridge for up to 5 days.
