After enjoying Sun Juice for months and with the weather starting to inch into warmer territory, I decided to make a smoothie version of the juice. I am calling it Sun Smoothie because it is filled with mango, papaya, oranges and lemons and the warmth of ginger. It is bright and vibrant and the colour of the rising sun. Plus it is absolutely delicious, filled to the brim with antioxidants and skin-loving Vitamin C. A great smoothie to enjoy, especially after a long weekend walk on a Saturday morning.

SUN SMOOTHIE (MANGO PAPAYA GINGER SMOOTHIE)

Ingredients

  • 1 cup frozen mango flesh
  • 1 cup papaya flesh
  • 1 orange, peeled
  • 1 lemon, peeled
  • ½ inch piece ginger
  • 1 cup almond milk*

Instructions

  • Place all ingredients in the jug of a blender and blend until smooth.
  • Enjoy straight away or store in a 325ml lidded glass jar for up to 2 days in the fridge.

Notes

Almond Milk - I really enjoy it with almond milk. This smoothie is best enjoyed fresh but keeps in the fridge for up to a maximum of 2 days. If you do want it to last longer - say 3-4 days, then swap almond milk out for coconut water.
If your smoothie is too thick, thin it with a little chilled water.
