I have an incredible recipe for a Flourless Pistachio Cake that has always been very popular at my cooking classes and workshops. That gorgeous cake is the inspiration for these delightfully green raw Pistachio Matcha Balls. You know, it is a good thing when a tried and tested recipe takes another form. This is why you'll love these matcha balls.

Ingredients & Substitutions
- Nuts - Pistachio nuts give these matcha balls a vibrant green base, cashew nuts provide an extra protein boost and add those beautiful white flecks. The nuts pack these matcha balls with healthy fats and a creamy, nutty texture.
- Matcha - I use Japanese ceremonial matcha powder for these matcha balls. It is sweet and vibrant and packed with antioxidants.
- Dates & Coconut - Dates provide fibre, add a natural sweetness and act as a binder for these matcha balls. Coconut adds texture and more fibre.
- Coconut Oil - A small amount of virgin coconut oil helps bind these matcha balls better.
- Flavours - Lemon rind, cardamom and salt add an excellent flavour combination that complements the matcha.
- Cacao powder - Raw cacao powder is rich in the amino acid L-Tryptophan that boosts the production of serotonin (the happy hormone) in your brain. Coating the matcha balls in cacao is like rolling them in chocolate but with all the health benefits of cacao.
How to make Pistachio Matcha Balls?
- Add all ingredients except cacao powder to the bowl of a food processor and process until you get fine crumbs and the mixture starts sticking together into a rough dough.
2. Take a tablespoon of the matcha ball mixture in the palm of your hand and roll it into a ball.
3. Roll these matcha balls in raw cacao powder until competely coated.
The mix for these matcha balls is gorgeous and green with all the matcha goodness; it is perfectly pliable and could be set in a tray and cut into bars or even cookie shapes. The matcha balls could be naked or dressed up for a nighttime tryst on the couch in a smattering of raw cacao powder. The biggest bonus is that one little bliss ball fills you up and leaves you satisfied so you are not constantly munching until your next meal. This recipe is a good thing. And you can never have too much of a good thing.

Ingredients
- 1/2 cup (75 g) raw cashew nuts
- 1/2 cup (70 g) raw pistachios
- 8 (140 g) Medjool dates, pitted
- 2 teaspoons matcha powder
- 1/4 teaspoon ground cardamom
- 1 tablespoon extra virgin coconut oil
- 1 teaspoon grated lemon rind
- 2 tablespoons (14 g) desiccated coconut
- pinch of salt
- raw cacao powder, or cocoa powder to dust (optional)
Instructions
- Place all ingredients (except cacao powder) in the small bowl of a food processor.
- Process to a coarse or fine consistency, based on preference.
- Roll into balls. You can optionally roll the balls in cacao powder for a chocolate coating.
- Matcha balls will keep in an air tight container in a cool part of your kitchen for up to 4 days.

Taste nice, the cocoa addition is good. However, the lemon and cardamon over powers the Matcha, so it is very difficult to pick out its subtle flavour.
Additionally the conversions are wrong, 2 tablespoon does not equal 10g that would be two TEAspoons.
Cheers! You could add more matcha if you prefer a stronger matcha flavour, but the balance is really nice with the citrus and spices coming through gently (besides, it is also inspired by the Pistachio cake that has the same flavours). The conversions are slightly off, 2 teaspoons only equates 4g (I just double checked on the kitchen scale) so it is definitely not 2 teaspoons. And 2 tablespoons gets you 14g which is more accurate for the recipe. So i have fixed that. Thanks!
